How to get out of a chopeer when the V key isn't working ???

Well, I think parachutes are an item in ArmA 3, and presumably they aren't in Alpha. And you might as well crash into the ground when you jump without anything to slow you down that high up.

No I'm talking about landing a chopper and just wanting to get out , just that simple ,would like to step out of a chopper on the ground, after landing, it doesn't work!

That does not work.

Try the Helicopter scenario....enter the chopper and try to get out again... you cant no matter what you press or do.

I have tried to map another button to "eject" but does not work...

ive thrown choppers down in the editor, flow them around, landed, and been able to get out just fine using the mouse wheel method.... i have NOT however tried it in the heli scenario.

This. There is no need to get out of the helo in that scenario. It is completed once you've touched ground.
