How to edit Steam downloaded missions?

I would like to edit some steam downloaded missions so I can use different weapons. I have a bunch of mods for realistic weapons, but I have no desire to try and design my own missions. If possible, how can I edit already made missions and just drop my ammo box's at the start point so I can play my own way?

Going off memory here but last time I played a steam scenario I think I remember seeing an EDIT button along the bottom of the list before you start the mission. Near the actual WORKSHOP button.

Is that still available?

If the mission uses VAS, and many of them do, you can usually start the game with any weapon mods and have them appear in the mission via VAS.

Failing that, you can grab the downloaded mission file to edit but I would try the above options first. Of course this all depends on author permissions too.

Not that I've seen, at least not the ones I have. I guess people can lock the missions? Where are these even saved, they don't show up in the Arma3 user folder where I figure I could try to open editor with

You have to play the mission first, start it anyways, then you can find it in your "hidden files" under "user" "app data", google it, I cannot give link, at work and some sites are blocked. You need to find the PBO and then get a PBO program to open the files. Its easy, just not that easy.
