Where do i find the vanilla cfgvehicles?

Trying to find it but to no avail.

Attempting to make replacement config pack for the default units.

For units your best bet would to look under Characters_F. They contain the majority of unit configs.

You can use the in game config viewer (in the mission editor). Then go to CfgVehicles, look for the vehicle you want and you will see where the models, textures and so on are located (in which Pbo in you Arma3\Addons folder).

You can copy the config on the right of the screen using ctrl+maj+c.
