I also have the same problem, i found out (like you all say, that removing workshop content will make it work, and that its not all maps that make the game crash) BUT if you have all content removed and start up arma3, create a new game, and from inside arma klick the workshop button at the bottom of the screen and add the map you want to host it works !. But once you restart arma3 and dont remove your workshop content the game will crash, its a bit of a hassle but at least you can host games ! Hope this helps for now :)
