The only thing that comes to mind would be full 6DOF. Might not be required as a soldier (that would require new anims), but when inside vehicles and aircrafts it would help alot. Should be doable as I've already seen a fan-video of it.

I'm using a 500w Mist PS (made on the same specs as Antec's). I'm also running 3 HDs in RAID-5 and a 7950GX2. Still plenty of reserves, so I'm sure your 500 or 550w is more than enough for a pair of Radeons.

I think a GF8800GTS should go nicely with that. It has the performance of a 7950GX2 but its cheaper and less noisy (I recommend XFX). A 400-450W PS is plenty enough for such a system. I have the vanilla P5B(I have no use for the DeLuxe accessories), E6700 and 2x1GB Kingston ValueRAM (I believe it is 5300 or something). Works like a clock, only faster.

Its very simple to get data off a 2.5" drive. You can buy a USB to IDE adapter (make sure it support the 2.5" interface) and connect it to any computer and copy whatever you need. This is how I do it for customers at work.
