Decent door gunner level

Could anyone give me any tips on makeing a good level where you play as a door gunner. I want the pilot to fly the chooper to one side of a convoy, flying low and to keep looping round and go for another run. With all these decent Choppers in Nam Pack2 I want to be able to use them.

At the moment I only know how to make it circle around a still place at low alititude:

Put a "move" waypoint with "Chopper1 flyinheight ALTITUDE". Then put a "Hold" waypoint in the middle of where I want it. As the chopper detects the enemy troops, he comes back circling around. Too bad the pilot can't position all that great, so it can take several tries.

Maybe you can adapt the same concept, but onto moving targets?
